A soup I made while needing to cut down my solid food intake.
INGREDIENTS
INGREDIENTS
- 1 onion, roughly chopped
- 1 garlic bulb, cloves separated and skins removed
- 2 bell peppers or sweet peppers, cut in bite sized chunks
- 2 sweet potato, peeled and cut in bite sized chunks
- 2 cups vegetable stock or water from boiling
- Salt and pepper
- Handful fresh basil
METHOD
Place the chopped onion, garlic, and pepper on a tray and drizzle with oil, making sure none of the ingredients are on top of each other. Grill for approximately 10 minutes.
Boil the sweet potato until tender in water or vegetable stock.
Add the roasted ingredients & basil to the sweet potato and puree the mixture to a nice smooth consistency.
Cook the soup on a low heat.
Season with pepper and salt.
Allow the soup to simmer for around 15 mins.
ALTERNATIVE SUGGESTIONS
You may want to roast the sweet potato.
Add Tobasco sauce to spice it up.
Garnish the soup with basil leaves chopped up or sliced.
