This recipe yields about four servings.
500g fresh strawberries
150g sugar, or more to taste
300g creame fraiche
Remove the stems from the strawberries. Cut lengthwise into quarters. Arrange the pieces on a baking sheet in a single layer and place into the freezer for 2 hours, until frozen solid.
Place the frozen strawberry pieces and sugar into a food processor and pulse briefly. Add the creame fraiche and pulse until smooth.
Transfer into another container and freeze.

You Could also try using yogurt; mascarpone cheese or a 50-50 mixture of Mascarpone & Creame Fraiche.
Once frozen put it back into the food processor and pulse again before serving
Using a Terrine mold makes a nice sized bar for slicing.
When transferring into a mould mix herbs such as mint, and chocolate chips for an added indulgence.
