Stovies are a Scottish dish traditionally made with meat, but can be made on its own for a vegetarian alternative.

- 55g butter or margarine.
- 2 large onions, roughly diced.
- 2 large carrots, peeled and sliced.
- Half large swede (turnip).
- 1 parsnip, peeled and sliced, (optional).
- 4 large potatoes, peeled and alternatively diced large & small, (small sections turn to mash).
- 150mls vegetable stock.
- Herbs (optional)
- Salt and pepper to taste
- Sauté the onions using the butter until well done.
- Add all the veggies.
- Toss, vigorously.
- Add stock.
- Turn down heat, cover tightly, ignore for about 30mins, or until everything is cooked.
