This is a basic bonnag recipe. Originally Bonnag was a unleavened thick crusted bread, but with the arrival and ease of access to new ingredients the recipe has changed to be more like a fruitcake today. The oldest recipe available (like this one) is probably no older than 250 years although the original is probably far far older.

227g Plain Flour (oat or barley flour to be more traditional)
28g Butter or Margarine (or 57g if prefered)
Pinch of Salt
227ml Buttermilk
1 Teaspoon of Bicarbonate of Soda
1 Teaspoon of Cream of Tartar
Method
Sift flour and salt into a bowl and rub in the butter or margarine.
Mix the buttermilk, bicarbonate of soda and cream of tartar together.
Gradually add the liquid into the dry ingredients and mix in-order to make a soft dough.
Turn onto a floured board and knead the dough until smooth. Shape into a round and place on a greased baking tray.
Mark into sections and brush the top with water.
Bake in an oven at 180 degrees celsius for thirty to forty minutes, or until well-risen and golden brown.

Add 110g dried fruit such as sultanas, currants (aka french berries), mixed fruit, mixed peel or raisins. Or even a mix of peel and fruit.
