A wonderful comfort food my mum use to make me, and I (partly due to a memory error) have added to it.
I love Egg In A Cup
Ingredients:
3 Eggs per person (I like more egg to bread ratio)
2 Slices Fresh Bread
Small Nob Butter
Pinch of Salt
Pinch of Pepper (not in my mothers recipe)
Pinch of Sugar (this is instead of the salt, and pepper and something I done as a mistake)
Directions:
Soft boil or poach the eggs (the eggs need to have runny yoke, and cooked white, but it is nice to have some of the yoke firm, it may be nice to cook one of the eggs hard),
Butter the bread (or add the butter separately), and break the bread into a Mug, or bowl
once the eggs are cooked (take the shell of if boiled) put in the cup and mash in with the bread and butter
Add salt and pepper to taste (or sugar)
